Chocolate starts with a tree called the cacao tree (Theobroma cacao). It’s sophisticated, silky and sublime. It’s scrumptious; it’s soothing; some say it’s downright sinful! It’s chocolate! The botanical name for the cacao tree is “Theobroma,” which translates to “Food of the Gods.” This tree grows mostly in equatorial regions and is believed to be discovered in Ecuador. However, it is indigenous all over South America, Africa and Indonesia.
The first documented European to see cacao beans was Christopher Columbus during his fourth voyage, when he intercepted a canoe off the coast of Yucatan in 1502. Columbus brought the first beans back to Spain and presented them to the Spanish Court. It wasn’t until 1519, when the conquistador Hernan Cortes wrote to the Spanish Crown that he had discovered a miracle beverage, “a cup of it gives every soldier the strength to march for an entire day”, that importance by Europeans was given to this “Food of the Gods”
Cacao is the most clinically complex super food to ever be discovered and studied on Earth or anywhere in the Universe. Scientists have identified over 380 chemical compounds within the Cacao bean that produce health benefits. There are over 1,200 constitutes of flavor which no other food even comes close. Royal Jelly, (a super food produced by bees) the next closest, has around 400 constitutes of flavor. Just remarkable! The Cacao Bean is really a nut and is typically about the size of an almond yet 16 times more nutritious.
CACAO (RAW CHOCOLATE) ANTIOXIDANTS
Raw chocolate, which is made from the cacao beans, has the highest concentration of antioxidants of any known food. This is tremendous because antioxidants fight free radical damage and help to prevent humans from aging and radiation damage. Antioxidants are actually the colors or pigments of colors in food. Cacao beans are orders of magnitude greater in antioxidants than any food. For example, Cacao contains 15 times greater antioxidants than blueberries or 20 times greater than Green tea or 30 times more antioxidants than red wine. According to research cited in The New York Times, fresh cacao beans are super-rich in antioxidant flavonols. Cacao beans contain 10,000 milligrams (10 grams) per 100 grams of flavonol antioxidants. Compare the cacao bean to processed cocoa powder (defatted, roasted cacao treated with potassium carbonate) and chocolates which range in flavonol content from the more common concentration of 500 milligrams per 100 grams in normal chocolate bars. Research has demonstrated that the antioxidants in cacao are highly stable and easily available to human metabolism.
Cacao is pronounced,”KaCow”…and in its natural state has no sugar or dairy in it. What is also extremely important to know and yet disturbing to reveal is: Cacao beans are the most widely eaten nut in the world yet almost no one eats it raw with all its nutrition. Nothing else can or will ever be substituted as the main ingredient in chocolate. Why? The cacao bean is so incredibly complex, rich, versatile and flavorful. Unfortunately, the raw bean has been massively processed by being cooked, toasted, roasted, micro-waved, heat-destroyed, hexane distracted in huge factories and before modern times that would be inconceivable. It’s criminal in my opinion because with 1,200 constitutes of flavor it’s not like it needs to be cooked in order to obtain flavor. Almost all of the benefits are destroyed when processed and it’s very easy to know: When you look to purchase a chocolate product if you see “cocoa” instead of “cacao” then you knows the bean has been heated over 118 degrees and all the nutritional value destroyed. Let’s continue to focus on the positives as there are so many it is too good to be true.
CACAO (RAW CHOCOLATE) NEUROTRANSMITTERS
Neurotransmitters make us more intelligent in fact many have claimed to have quantum leaps in intelligence by consuming cacao beans. If we get enough quality cacao with the right neurotransmitters delivered by this incredible food, we become more intelligent. Just as we exercise our physical bodies there are brain exercises that can truly benefit us. Substances in raw chocolate that have been discussed in the scientific literature as pharmacologically significant, include: anandamide (bliss chemical), arginine (nature’s Viagra), dopamine (neurotransmitter), epicatechins (antioxidants), histamine, magnesium, serotonin (anti-stress neurotransmitter), tryptophan (anti-depressant amino acid), phenylethylamine (PEA), polyphenols (antioxidants), tyramine, and salsolinol.

Phenylethylamine
Phenylethylamine (PEA) PEA is a chemical in cacao that increases the activity of neurotransmitters (brain chemicals) in parts of the brain that control our ability to pay attention and stay alert. Elevated PEA levels occur when we are captivated by a good book, movie, or project; this happens specifically during those moments when we are so focused that we lose all track of time, food, and the outside world. PEA is noticeably abundant in the brains of happy people.
Anandamide (The Bliss Chemical)
A neurotransmitter called anandamide (n-arachidonoylethanolamine), has been isolated in cacao in quantities significant enough to affect the brain. Anandamide is a cannabinoid naturally found in the human brain. Anandamide is a lipid (fat) known as “the bliss chemical” because it is released while we are feeling great. Anandamide is not found in any food except Cacao. The only other source of this incredible neurotransmitter happens to be from a plant that has to be smoked marijuana. The difference is that there are no ill side effects from consuming raw chocolate with the exception of too many calories. Smoking marijuana can deplete your dopamine levels and lead to nervous conditions such as Parkinson’s disease or cause brain damage and it’s illegal.
MAO inhibitors
These rare MAO inhibitors actually produce favorable results when consumed by allowing more serotonin and other neurotransmitters such as anandamide, dopamine, etc. to circulate in the brain. According to Dr. Gabriel Cousens,
