Chocolate starts with a tree called the cacao tree (Theobroma cacao). It’s sophisticated, silky and sublime. It’s scrumptious; it’s soothing; some say it’s downright sinful! It’s chocolate! The botanical name for the cacao tree is “Theobroma,” which translates to “Food of the Gods.”  This tree grows mostly in equatorial regions and is believed to be discovered in Ecuador.  However, it is indigenous all over South America, Africa and Indonesia.

The first documented European to see cacao beans was Christopher Columbus during his fourth voyage, when he intercepted a canoe off the coast of Yucatan in 1502. Columbus brought the first beans back to Spain and presented them to the Spanish Court.  It wasn’t until 1519, when the conquistador Hernan Cortes wrote to the Spanish Crown that he had discovered a miracle beverage, “a cup of it gives every soldier the strength to march for an entire day”, that importance by Europeans was given to this “Food of the Gods”
Cacao is the most clinically complex super food to ever be discovered and studied on Earth or anywhere in the Universe. Scientists have identified over 380 chemical compounds within the Cacao bean that produce health benefits. There are over 1,200 constitutes of flavor which no other food even comes close.  Royal Jelly, (a super food produced by bees) the next closest, has around 400 constitutes of flavor. Just remarkable! The Cacao Bean is really a nut and is typically about the size of an almond yet 16 times more nutritious.

 

CACAO (RAW CHOCOLATE) ANTIOXIDANTS

Raw chocolate, which is made from the cacao beans, has the highest concentration of antioxidants of any known food. This is tremendous because antioxidants fight free radical damage and help to prevent humans from aging and radiation damage.  Antioxidants are actually the colors or pigments of colors in food.  Cacao beans are orders of magnitude greater in antioxidants than any food. For example, Cacao contains 15 times greater antioxidants than blueberries or 20 times greater than Green tea or 30 times more antioxidants than red wine.  According to research cited in The New York Times, fresh cacao beans are super-rich in antioxidant flavonols.  Cacao beans contain 10,000 milligrams (10 grams) per 100 grams of flavonol antioxidants. Compare the cacao bean to processed cocoa powder (defatted, roasted cacao treated with potassium carbonate) and chocolates which range in flavonol content from the more common concentration of 500 milligrams per 100 grams in normal chocolate bars. Research has demonstrated that the antioxidants in cacao are highly stable and easily available to human metabolism.

Cacao is pronounced,”KaCow”…and in its natural state has no sugar or dairy in it. What is also extremely important to know and yet disturbing to reveal is: Cacao beans are the most widely eaten nut in the world yet almost no one eats it raw with all its nutrition.  Nothing else can or will ever be substituted as the main ingredient in chocolate.  Why?  The cacao bean is so incredibly complex, rich, versatile and flavorful.  Unfortunately, the raw bean has been massively processed by being cooked, toasted, roasted, micro-waved, heat-destroyed, hexane distracted in huge factories and before modern times that would be inconceivable. It’s criminal in my opinion because with 1,200 constitutes of flavor it’s not like it needs to be cooked in order to obtain flavor.  Almost all of the benefits are destroyed when processed and it’s very easy to know:  When you look to purchase a chocolate product if you see “cocoa” instead of “cacao” then you knows the bean has been heated over 118 degrees and all the nutritional value destroyed. Let’s continue to focus on the positives as there are so many it is too good to be true.

 

CACAO (RAW CHOCOLATE) NEUROTRANSMITTERS

Neurotransmitters make us more intelligent in fact many have claimed to have quantum leaps in intelligence by consuming cacao beans. If we get enough quality cacao with the right neurotransmitters delivered by this incredible food, we become more intelligent. Just as we exercise our physical bodies there are brain exercises that can truly benefit us. Substances in raw chocolate that have been discussed in the scientific literature as pharmacologically significant, include: anandamide (bliss chemical), arginine (nature’s Viagra), dopamine (neurotransmitter), epicatechins (antioxidants), histamine, magnesium, serotonin (anti-stress neurotransmitter), tryptophan (anti-depressant amino acid), phenylethylamine (PEA), polyphenols (antioxidants), tyramine, and salsolinol.

 

Opiates

Dr. Drewnowski from the University of Michigan found that chocolate triggers the production of opioids. Opioids are chemicals, such as those found in opium, that produce a feeling of well-being (euphoria). He found that eating chocolate causes the brain to produce natural opiates, which dull pain and increase a feeling of well-being.

 

Phenylethylamine

Phenylethylamine (PEA) PEA is a chemical in cacao that increases the activity of neurotransmitters (brain chemicals) in parts of the brain that control our ability to pay attention and stay alert. Elevated PEA levels occur when we are captivated by a good book, movie, or project; this happens specifically during those moments when we are so focused that we lose all track of time, food, and the outside world. PEA is noticeably abundant in the brains of happy people.

 

Anandamide (The Bliss Chemical)

A neurotransmitter called anandamide (n-arachidonoylethanolamine), has been isolated in cacao in quantities significant enough to affect the brain. Anandamide is a cannabinoid naturally found in the human brain. Anandamide is a lipid (fat) known as “the bliss chemical” because it is released while we are feeling great. Anandamide is not found in any food except Cacao.  The only other source of this incredible neurotransmitter happens to be from a plant that has to be smoked marijuana.  The difference is that there are no ill side effects from consuming raw chocolate with the exception of too many calories.  Smoking marijuana can deplete your dopamine levels and lead to nervous conditions such as Parkinson’s disease or cause brain damage and it’s illegal.

 

MAO inhibitors

These rare MAO inhibitors actually produce favorable results when consumed by allowing more serotonin and other neurotransmitters such as anandamide, dopamine, etc. to circulate in the brain. According to Dr. Gabriel Cousens,

What is really in our drinking water?

 

 

 

 

 

 

 

So what is really in the water that we drink?  Is it safe?  How important is clean pristine water and how do we secure this precious resource?  Let’s start by quickly reviewing what few resources we need to just to sustain life.  First and most importantly humans depend on air to live.  More than a few minutes without air we can’t survive.  Without food we can’t survive longer than a month or so depending on your health.  That makes water the second most important and vital resource we need in order to just stay alive. Most people would perish in under a week without water.

 

Over time we are being poisoned by the many chemicals that are in water.  Interestingly there are many things about water we have yet to learn about from scientists.  Only water can be a liquid, solid and a gas all at the same time.  Just think about a winter’s day… you will find ice on the roads, melting snow and clouds above you.  Can you think of anything that can be solid liquid and a gas simultaneously?

 

Water is also an incredible and ultimate dissolver.  What does that mean?  Well, over time, water can literally liquefy rocks and make a mountain into mole hill.  Because water is the ultimate dissolver it breaks down anything it comes across and pollutes itself and we end up drinking it.  In fact, there are ways we can measure this.  One way to measure how many chemicals are in our water supply is with a TDS (Total Dissolved Solvents) meter. And a TDS meter is only about $25.  Unfortunately there is no man-made filter that can remove all the chemicals, metals and gases found in water.

 

Let’s start by taking a stark look at what is in our municipal water or tap water supplies.  It’s just a question of varying degree but these chemicals; bacteria, metals, gases, etc …are in our drinking water.  And over time unfortunately causes health ailments that can manifest into diseases. These are the alarming facts.

 

There is a way to see what see what’s in your water and that’s Black Mica.  If you placed black mica in the water and let it sit for 24-72 hours you would see what really in it… and it is incredibly revealing.  Besides H20 or water here is what else is in what we drink.

  1. Used Toilet Paper is abundantly found in our drinking water.  Just disgusting!  By some estimates 40% of flu’s and fevers are attributed to municipal water.
  2. Chlorine is also a dissolver and a burning agent.  When we take a shower we are putting ourselves in a gas chamber where our skin (largest organ) absorbs more chlorine than by drinking 8 glasses.  Our government could choose much safer agents to kill bacteria like hydrogen peroxide. I wrote a previous article regarding all the facts and I encourage you to read it.  Chlorine, when we drink it in our water, it creates micro-tears in the linings of our veins and arteries and plaque can then stick and build up over time. .
  3. Fluoride is not safe and even toxic when ingested.  It debatable whether it’s beneficial when applied topically to teeth as found in most toothpastes.  The research states fluoride calcifies our body and keeps us docile.  Fluoride in our drinking water unfortunately dumbs us down.  In fact, when ingested, it is most responsible for calcifying our pineal gland which sits in the middle of our brain.  It’s also known as our Third Eye.  Our Third Eye or Pineal gland (affectionately called the valley of spirits) when working properly provides all of us with intuition, clairvoyance, etc.  I suggest for you to find a toothpaste without fluoride and use hydrogen peroxide as your mouth wash.  Most mouth washes are toxic to us and kill off the natural bio-film you have in your mouth.
  4. Industrial Chemicals. There are over 80,000 industrial chemicals that seep into our water supply.  This is an alarming and horrifying fact.  A large percentage or over 20,000 of these industrial chemicals cannot be filtered out of our drinking water.  Is it any surprise why people get cancer?  In 1900 only 1 out of 8,000 people got cancer.  Today its one out of three people will get cancer. One out of two people will develop heart disease and that may have a lot to do with Chlorine in our water supply.   Almost 97 percent of these industrial chemicals were not around before the year 1900 either.  I see the correlation and I hope you do too.  I guess the war on cancer is not going very well. How could it?
  5. Anytime a person taking drugs urinates it ends up in our water supply.  And this regardless of it being street drugs or pharmaceuticals.  Unfortunately there are no man-made filters that can successfully filter out all the drugs.
  6. Calcium. There are good sources like dark leafy greens or vegetables such as broccoli.  Or toxic sources of calcium like calcium carbonate.  This is basically chalk which calcifies you and makes your joints ache and causes plaque build- up and many diseases. Calcium is the main culprit that causes most types of inflammation. This type of calcium seen its day in the sun and has been dead for eons.  What’s worse is the number one supplement in America being sold is CALCIUM. Why is that? Because it’s dirt-cheap to get and and makes incredible money. It’s proof-positive what marketing can do.  And again it’s chalk.  You body can’t use calcium carbonate to build strong bones. Our body doesn’t know what to do with it . The facts show bad micro- organisms will use calcium carbonate as a shield to stop the immune system from attacking it.   Your body transmutates magnesium, silica, boron & phosphorus into good calcium to build strong bones, not chalk.  Or it will use the good calcium from dark leafy greens to build strong bones. To test a new water supply the Native Indians would always boil down their water until it was completely evaporated.  If they saw a white film of residue than they would not drink from that water supply.  Take the test and see if you see a white film with your own drinking water or municipal water.  If you do that is the bad calcium and it will calcify your body over time.  This test has been used by many cultures over the millenniums to see if their water supply was safe for drinking
  7. Heavy metals are also found in our drinking water from municipal water supplies and causes tremendous damage to our body and even death.

Specific heavy metals within water

Iron ingestion is not generally unhealthy & is absolutely necessary in small amounts. However, some research has found over exposure to iron, especially the addition of iron in water, can lead to heart disease, cancer &diabetes. The problem with iron is that it is often included in supplements & enriched products. It is also in red meat & so it may be quite easy to consume too much iron. If you add extra iron to the water supply, it is almost certain that consumers will be ingesting too much iron with little difficulty.

Mercury is a liquid metal that is used in cell batteries, fluorescent lights, switches, other control equipment. Excess mercury in water can lead to loss of muscle control, kidney disease & brain damage. Mercury levels have been found to be much higher than safe levels in many water systems..

Nickel is a metal that is mainly used in making stainless steel & other metal alloys. Long term over exposure to nickel has been found to decrease weight, irritate skin & cause heart & liver damage.

Selenium is a metal that is used mainly in electronics & photocopiers. However, it is also in widespread use in glass, rubber, textile & petroleum industries. Selenium is an essential nutrient at low levels with many people even ingesting selenium supplements. However, at toxic levels selenium can cause kidney & liver damage & problems to the nervous & circulatory systems.

Thallium is a metal that is mainly used in specialized electronic equipment. Over exposure to thallium causes severe health problems including liver, kidney, intestinal & testicular damage.

  1. Radioactive water occurs when atomic power plants, military weaponry &medical equipment produce radioactive wastes that end up in our water supply. Also, and this is never talked about, from radioactive people.  That is right.  When someone is diagnosed with cancer and they decide to undergo chemo and radiation then their urine becomes radioactive and no filter can take that out.  We then drink radioactive water. Over exposure to radioactive water can cause severe health problems. These include bone & liver cancer. Also radioactive water effects basic genetic structure which could cause birth & developmental defects our body …
  2. Natural Gas can be found in our water supply in many parts of the country. Fortunately, it’s not ubiquitous but is a growing problem. You could literally turn on your water and light your water on fire with just a match. How is this possible? The brew of toxic chemicals mixed with millions of gallons of water that fracking requires could both pollute and deplete our water supply. First used commercially by Houston oil giant Halliburton( Dick Cheney’s company) in 1949, fracking injects a pressurized mix of water, chemicals and sand into shale, fracturing the rock, with the sand holding it open so that gas can flow up the well. Every fracking job uses an average of 4 million gallons of water, delivered to the drilling site by hundreds of tanker trucks. As much as 90% of wastewater from the process remains in the well or seeps into our water supply.  The briny, chemical-laden, possibly radon-laced water that comes back up the well is stored in open pits until it’s trucked to treatment plants or to other wells.
  3. Bottled Water.  Is that any safer? No! In fact it is worse. First of all they use municipal water for most of their water and then turn around and charge us a premium for it.  Both the municipal water companies and bottled water companies use filters.  But bottled water companies have no checks and balances as the do Municipal water companies.  That means we have to trust them blindly if we buy their water because there is no third party company to verify the integrity or quality of their water. You can go online to your local municipal water company and see the results of their water testing but you definitely can’t do that with bottled water companies.  Even if you could they would be the ions doing their own tests.  Marketing plays a huge part in the success of these bottled water companies.   Most water bottle companies are owned by big pubic companies like Coco-Cola.  And I believe it’s more dangerous to drink from bottled water companies.  They have a free pass on water quality checks and balances. There marketing claims their water comes from Natural Spring. And that could be true but only a small percentage actually does the rest comes from the same place as municipal water.  But is gets worse, to save money bottle water companies blow up and make their own plastic bottles at their facilities.  The plastic is still hot while they fill it up with water.  That’s completely unstable because it leeches dioxides and plastics. That means you are drinking a toxic plastic soup that you are paying a premium for. And plastics are not biodegradable they are photo-degradable (light breaks down plastics) And that further breaks down the plastics when we drink our clean polluted water we have been sold. It screws up our hormones by giving us bad estrogen.  Oh and let’s not forget to mention that all plastics are made from the petroleum industry with are dead marine and fossil life.

Cancer is all around us and it comes from places we least expect.  One of the alarming and disturbing sources is Fragrances.  The media projects images of sheer beauty and wearing perfume symbolizes sex appeal.  Many Hollywood stars have a fragrance named after them or are marketed by them.  It’s very cheap to produce but most of us never consider the hidden dangers.  Have you ever questioned if what’s inside your perfume bottle and do you just assume is completely safe? Let’s consider the facts.
Fragrances are all around us. It’s difficult to avoid taking a whiff of someone’s perfume or cologne. It’s almost everywhere you go from the office, to a movie theater, car, on the train, or someone’s house or apartment. Besides colognes and perfumes, scents are found in air fresheners, candles, dryer sheets, laundry products, shampoo, and other personal care products.

Most scents are pleasant; some are irritating to our system and or overpowering.  Most fragrances do not come from flowers and other natural sources.

The Federal Fair Packaging and Labeling Act of 1973 require cosmetic ingredients to be listed on product labels, but explicitly exempt fragrances. Now why is that?  Why do fragrances get a free pass? This means that the fragrance industry can put in anything they want–even if those ingredients are harmful to your health.

Fragrance makers use up to 5,000 different ingredients. From some of the sources out there here are several disturbing facts about these fragrance ingredients:

•    16 percent of the colognes, fragrances, and perfumes reviewed by the Environmental Working Group (EWG) use carcinogenic ingredients. 18 percent contained penetration enhancers that increase the exposure to carcinogens and other harmful ingredients.

•    Only about 1,300 of over 5000 fragrance ingredients have actually been tested and evaluated

•    About 95 percent of the chemicals used as fragrance ingredients are petroleum based chemicals.
•    The EWG found that there are 38 secret chemicals found in 17 brand name perfumes, including those by American Eagle, Armani, and Chanel.

Two of the most common ingredients are phthalates and synthetic musk. Phthalates are plasticizing ingredients classified as endocrine disrupters. These endocrine disrupters are probable reproductive or developmental toxins linked to birth defects and low sperm count in men. These chemicals have been linked to organ damage, cancer and immune suppression.

Synthetic musk, are not listed on perfume labels. Musk chemicals like AHTN, ketone, and xylene have been found deposited in human breast milk and fat tissue. A study conducted by two Stanford researchers showed that synthetic musks may inhibit your body’s natural defenses against toxicants.

The harmful chemicals in fragrances are either inhaled or absorbed through the skin and can accumulate in your body. Dr. Mercola warns that the more perfume and personal care products you use, the greater the risk of polluting your body with multiple dangerous ingredients. This pollution begins in the womb and continues through life.

Here’s is what’s most interesting. You don’t need artificial fragrances for the opposite sex to notice you. The latest research shows that your natural scent is more seductive than perfume. Simply sniffing the shirt of an ovulating woman is enough to significantly increase a man’s testosterone levels. Men may be able to sense the time a woman is most fertile based on her natural scent. You may not make that connection consciously but we have been programmed this way as a species.

This “scent,” however, may stimulate your senses at an unconscious level through pheromones. Pheromones are small organic molecules that influence biological processes to stimulate your sex drive.

To protect yourself and those around you, avoid all artificial fragrances. It’s easy to switch to natural scents made from high-quality, 100 percent pure essential organic oils instead.  It’s all natural and can quickly absorb into the bloodstream with many beneficial benefits. It acts as a healing agent for all types off conditions from colds, eczema, to rashes, congestion and headaches and even memory loss.

Take note that essential oils are made from plants. They are different from fragrance oils, which are artificial and often contain synthetic chemicals. Fragrance oils may smell better and are typically less expensive but they do not provide the therapeutic benefits of organic essential oils, and may not be as safe.

How long can we live for?  How does 250 Years Old plus sound?  Here’s Proof!

I thought my fellow readers may enjoy a topic of such positive magnitude. How long can we live?  We may have all thought 110 or 120 years of life at most was the maximum limit but that number appears to be more than double.  How could this be? Is it just pure genetics? Was some mistake made?  Maybe you would never even want to live that long.  But if you were full of vitality, youth and wisdom with a great sense of adventure and zeal for life, maybe would you? Li Ching-Yuen was 251 years old when this picture of him was taken.  Looks incredibly youthful considering his age.

Li Ching-Yuen or Li Ching-Yun (traditional Chinese: 李清雲; pinyin: Lǐ Qīngyún; died May 6, 1933) was a Chinese herbalist, martial artist and tactical advisor. He claimed to be born in 1736, while disputed records suggest 1677. Both alleged lifespans of 197 and 256 years far exceed the longest confirmed lifespan of 122 years and 164 days after the older French woman Jeanne Calment.

Biography

Li Ching-Yuen was supposedly born in 1677 in Qi Jiang Xian, Szechuan province. By his own account, he was born in 1736. However, in 1930, Professor Wu Chung-chieh of the University of Chengdu discovered Imperial Chinese government records from 1827, congratulating one Li Ching-Yuen on his 150th birthday, and further documents later congratulating him on his 200th birthday in 1877. In 1928, a New York Times correspondent wrote that many of the old men in Li’s neighborhood asserted that their grandfathers knew him when they were boys, and that he at that time was a grown man.[1]

He began gathering herbs in the mountain ranges at the age of ten, and also began learning of longevity methods, surviving on a diet of herbs and rice wine. He lived this way for the first 100 years of his life. In 1749, when he was 71 years old, he moved to Kai Xian to join theChinese army as a teacher of the martial arts and as a tactical advisor.

One of his disciples, the Taiji Quan Master Da Liu told of Master Li’s story: at 130 years old Master Li encountered an older hermit in the mountains who taught him Baguazhang and a set of Qigong with breathing instructions, movements training coordinated with specific sounds, and dietary recommendations. Da Liu reports that his master said that his longevity “is due to the fact that I performed the exercises every day – regularly, correctly, and with sincerity – for 120 years.”[2]

In 1927, Li Ching Yuen was invited by General Yang Sen to visit him in Wan Xian, Szechuan. The general was fascinated by his youthfulness, strength and prowess in spite of his advanced age. His famous portrait was photographed there. Returning home, he died a year later, some say of natural causes; others claim that he told friends that “I have done all I have to do in this world. I will now go home.”

After Li’s death, General Yang Sen investigated the truth about his claimed background and age. He wrote a report that was later published. In 1933, people interviewed from his home province remembered seeing him when they were children, and that he hadn’t aged much during their lifetime. Others reported that he had been friends with their grandfathers.

Li’s obituary was printed in The New York Times, Time Magazine, and other publications. The Time magazine article stated that in 1930 Professor Wu Chung-chieh, from ChengduUniversity, found records from the Chinese Imperial Government congratulating Li Ching Yuen in his 150th birthday in 1827.[3]

Taking a shower! The hidden dangers!


 

 

 

It’s easy to visualize a hard day’s work or where you really pushed yourself during a brutal workout.  For most us all we want to do is take a nice hot shower.  Maybe that’s the first thing you do in the morning or before you go to bed, either way, it is how we clean ourselves.  And it’s safe, right?  So as you take off your clothes and you turn on the water to get the temperature just right. Milk Does A Body Good! Or Does it? The Truth!

 

 

 

 

 

Milk is part of the Food Pyramid and integral part of our culture.  From almost the time we are conceived most Americans consume milk and dairy products.  We are reassured through the media of healthy, beautiful people and their messages that “milk does a body good”  The truth is that most human beings that live on this planet do not drink or use cow’s milk.  And the reason is most people don’t is because it makes them sick.  There are a growing number of Americans who are eliminating dairy products from their diets altogether.  If it is part of the five food group, than isn’t it a necessity?  After all, we know that milk has calcium, vitamin D and a great source of protein. Then why are Americans eliminating dairy products.

There are three reliable sources of information I believe to trust the information we receive.  First, and probably the best source, is the study of nature.  All animals who consume milk are weaned off of milk very early in life.  The second source is to study the history of our own species.  And finally, we need to review the the world’s scientific literature on the subject of milk.

Of the many thousands of articles that are written on the subject, none of the authors speak of cow’s milk or dairy products as being an excellent food for us.  The main focus has been the side effects of these published reports which include intestinal colic, intestinal irritation, intestinal bleeding, and anemia, allergic reactions in infants and children as well as infections such as salmonella.  There is also a connection of viral infection with bovine leukemia virus or an AIDS-like virus as well as the concern for childhood diabetes.  Children who consume dairy products have problems with allergies, ear and tonsillar infections, bedwetting, asthma, intestinal bleeding and diabetes.  In adults the problems are around heart disease and arthritis, sinusitis, allergies, and more serious problems of leukemia, lymphoma and cancer.

Here why milk is bad for human consumption

Milk is a maternal lactating secretion, a short term nutrient for new-borns.  The mother of any mammal will only provide their milk to their offspring’s for a short period immediately after birth. The only exception is humans. And why is that and is that natural?  Our source is from a cow and is that good.  Simply put, no.

Cows are always getting infections around their udder that requires ointments and antibiotics which also requires penicillin. A recent report showed an increased concentration in pesticides in the milk.

The fact are female cows are milked 75% of the time they are pregnant. As a consequence of this, their milk contains elevated hormone levels.  And these elevated hormone levels are true of both organic and non-organic dairy farms.  When we talk about dairy, “cow dairy” is what is referred to, as it is the major animal milk consumed in the United States. Even products from other animal sources such as goat and sheep present nutritional problems as cows’ milk? There are some differences in milk from these animals, for example sheep’s milk is higher in fat.  However, few people consume goat or sheep milk in the United States.  Goats and sheep have not been selected because they have not been breed for high yields that cows provide.  I think it is better to enjoy the special cheeses and products made from goat and sheep milk in moderation, but I would be cautious about drinking or consuming large amounts of their dairy products on a regular basis.

 

This is an astonishing fact:  Drugs, antibiotics, hormones, steroids, forced feeding plans (cows fed genetically modified corn to fatten them up, not grass fed) and specialized breeding has allowed top producers to yield 50,000 pounds of milk per year.  Fifty years ago the average cow yielded only 2,000 pounds of milk a year.  That’s an astronomical 2,500% increase. And humans are consuming all those drugs, hormones, antibiotics, pesticides, GMOs, steroids in our milk, dairy and meat products that come from cows.

 

Let’s quickly mention the problems of bacterial contamination such as Salmonella, E. coli and staphylococcal infections that come from milk.  Raw milk considered ‘natural’ is known to cause tuberculosis which was a major problem in our past.  This is the whole reason why they pasteurize milk or heat it to kill off the bacteria and viruses. The process also destroys the quality.  The bovine leukemia virus is found in more than three of five dairy cows in the US.  When the milk is pooled, a very large percentage of all milk produced is contaminated (90 to 95 per cent) of course the virus is killed in pasteurization-if the pasteurization was done correctly. The bovine leukemia virus is known to cause human leukemia.  Dairy farmers have significantly elevated leukemia rates.  Recent research shows lymphocytes from milk fed to neonatal mammal’s gains access to bodily tissues by directly passing through the intestinal wall.

 

What about calcium and cows being a great source? Not true! Cows get their calcium from green thing that grow from the ground, mainly from leafy vegetables, just as humans do,  Rhinos and elephants develop huge bones (after being weaned) by eating green leafy plants. They don’t eat meat. They do not get it from milk which is fortified with calcium or should think of it like chalk.  That is what it is and very problematic as it actually causes calcification in our bodies.

 

Linoleic acid found in milk and what was put in children’s formula back in the 1960s but gave skin lesions to children and was discontinued.  Also, essential fatty acids are just what the cows’ milk is very deficient in when compared to human’s milk.  Essential fatty acids like Omega 3, 6 and 9 are not made in the body, except in human milk, but we must consume for healthy life.

 

Milk is a good source of protein. Or is it?  Well milk is is a rich source of protein but humans have a very difficult time absorbing it.  Vegetable protein is identical for all practical purposes and does not have bad cholesterol and vastly less saturated.

 

Lactose or milk sugar it seems ifs disaccharide is too large to be absorbed into the blood stream without first being broken down into monosaccharides, namely galactose and glucose.  This requires the presence of an enzyme, lactase plus additional enzymes to break down the galactose into glucose.   Nature gives humans the ability to metabolize lactose for a few years and then shuts off this process.  Is Mother Nature trying to tell us something?

Coconut Kefir Cheese

 

 

 

 

 

 

How to make Coconut kefir cheese using young coconut meat. Use 3-7 young coconut Organic preferably.

  1. Wash and scrub hands thoroughly for one minute….rid bad bacteria
  2. Drill hole into coconut or use a knife and a hammer and cut a small square on top of coconut
  3. Use coconut juice for Coconut Kefir Juice and the white meat for the cheese
  4. Once juice is out take knife and using a hammer cut coconut in half….
  5. Spoon out coconut meat using a big metal spoon.  If meat is gray then it is bad.  The tenderer the WHITE coconut meat is the more fresh the coconut is.
  6. Using a knife scrape or cut off any brown that is on meat. This is normal as it is part of the husk.
  7. Repeat step 6 to make sure you have taken any brown husk off when finished with all coconuts
  8. Using a blender put all coconut meat in and some coconut juice to help with the blending
  9. Puree coconut meat into a cream…Will taste sweet before fermenting…
  10. Heat coconut meat using thermometer (if possible otherwise not hot or cold to the touch of finger) in a pot (not glass for heating) until 90 degrees, then immediately remove… less than body temperature.  Do not cook!!!
  11. Add full spectrum of quality probiotics if desired and mix. (Not necessary as first generation bacteria is already present) It will speed process of fermentation
  12. Add teaspoon to a tablespoon of quality salt depending on quantity… Preferably Celtic sea salt or Himalania Pink Salt… (DO NOT use ionized salt or Morton’s salt) then stir into juice with wooden or metal spoon. (helps with electrolytes, bacteria can move around and multiply)
  13. Place into a glass jar and place air tight lid …. If jar is not full of pureed coconut meat don’t worry, it’s ok.
  14. Wrap glass jar with a towel and place into a cooler
  15. This you have to be very careful with as it will be ready between 16-24 hours depending on how sour you like it…
  16. Place into refrigerator and enjoy.  I like to use it like a cream cheese or spreading it on roasted Seaweed (Tokyo Sushinori) Same thing they use for sushi… Plus you have the added benefit of eating sea vegetables which is extremely good for you.  You can mix on salads or crackers, bread…  Anywhere…just be as creative as you want to be with it.
  17. Repeat process on new batch with exception of adding a quarter of a cup of previous fermented coconut kefir cheese you made previously.  It will speed up fermentation process and make stronger… Repeat this step a maximum of 5 times.

How to make coconut kefir juice:  3-7 Young coconut.  Organic if possible.

  1. Wash and scrub hands thoroughly for one minute….rid bad bacteria
  2. Drill hole into coconut or use a knife and a hammer and cut a small square on top of coconut
  3. Drain juice into glass bowl ….sometimes coconut will be bad and you can tell because the coconut meat will be gray and not white and juice will be brown… juice should almost clear.  I use 2 glass clear bowls to be certain I do not mix in a bad juice into big glass bowl.
  4. Heat coconut juice using thermometer (if possible otherwise not hot or cold to the touch of finger) in a pot (not glass for heating) until 90 degrees, then immediately remove… less than body temperature.  Do not cook!!!
  5. Add full spectrum of quality probiotics if desired and mix. (Not necessary as first generation bacteria is already present and purchased probiotics are weak) Adding probiotics will speed process of fermentation
  6. Add teaspoon to a tablespoon of quality salt depending on quantity. Preferably Celtic sea salt or Himalania Pink Salt…DO NOT use ionized salt or Morton’s salt…then stir into juice with wooden or metal spoon.
  7. Place into a glass jar and place air tight lid …. If jar is not full of juice don’t worry, it’s ok.
  8. Wrap glass jar with a towel and place into a cooler
  9. Wait 3-5 days or longer… You will see a white powder at top… That’s great especially if you see strings of white extending down into juice…That’s preferable! Very strong.
  10. Then Coconut Juice Kefir is ready to drink and will taste like a sour carbonated soda..  I like to drink this first thing in morning on empty stomach.. Normally I have 2-3 glasses of this juice.   Make sure you have nowhere to go for next few hours as you will go to the bathroom 4-7 times and will clean you out incredibly well.  Great for liver, digestion, skin… etc Energy thru the roof!!
  11. Store in the refrigerator for later consumption.
  12. Repeat process on new batch with exception of adding a half of a cup of previous fermented juice you made previously.  It will speed up fermentation process and make stronger… Repeat this step a maximum of 5 times.

Cultured Vegetables: Cabbage, Kale, Romaine lettuce and Carrots

 

 

 

 

 

 

  1. Wash and scrub hands thoroughly for one minute….rid bad bacteria
  2. Put veggies into food processor or cut into very small pieces(puree 1/4 of mixture) and some medium size pieces ok…. Veggies can vary but I believe simple is best… equal parts…  Cabbage, Kale, Romaine lettuce and Carrots(parsley very good)…. (organic a must as it has more natural bacteria already present)
  3. Mix veggies together thoroughly and keep natural juices
  4. Add teaspoon to tablespoon of quality salt depending on quantity. Preferably Celtic sea salt or Himalania Pink Salt (DO NOT use ionized salt or Morton’s salt) then stir into veggies with wooden or metal spoon.
  5. Add full spectrum of quality probiotics if desired and mix. (Not necessary as first generation bacteria is already present and probiotics are weak) It will speed process of fermentation
  6. Heat veggies using thermometer (if possible otherwise not hot or cold to the touch of finger) in a pot until 90 degrees, then immediately remove… less than body temperature.  Do not cook!!!
  7. Place into a glass jar and top jar using full pieces of Romaine lettuce to take place of any air gaps
  8. Place air tight lid and wrap a towel around jar and place into cooler for a week or more depending if you used probiotics.  Color will brighten up…. If color becomes moldy looking you waited too long.  Will taste sour but good and will diminish cravings for sugar.
  9. Place in refrigerator after veggies have been cultured for eating.
  10. Repeat process on new batch with exception of adding a half of a cup of previous cultured veggies you made previously.  It will speed up fermentation process… Repeat this step a maximum of 5 times.

On a daily basis I eat fermented or cultured foods and juices.  Monday I may have Coconut Kefir Juice and Tuesday Fermented Veggies and Wednesday Coconut Cheese and Thursday Fermented Mangos … You will love this food.  It is an acquired taste.  The first time you tried beer or liquor you probably didn’t like it but know you love it.  By eating sour foods it will first diminish and then eliminate your cravings for sugar and bad sweets.If at first you really find it too sour you can always add honey or peanut butter to the coconut cheese to sweeten it up.  For those who want no sugar Stevia is a great alternative. You can add fresh squeezed  orange juice to coconut kefir juice or whatever variation you desire. If you have a big dessert or sugar binge then eat fermented foods immediately with it and theses little guys will go to work and eat the sugar and your blood sugar will not spike nearly as high.  Just like you drink water every day you need fermented foods and beverages every day.  Even with a pristine diet, the air we breathe is toxic and kills good bacteria. Even if we farmed our own fruits and vegetables, acid rain is toxic to our system.  Plus the bad bacteria is always trying to get the upper hand and kills off these good guys.  In addition we have 300-500 good types of bacteria and many beneficial ones only last for a few hours to a day.

We are mostly made up of bacteria; let’s make it the good ones. So don’t be nervous, embrace this fact. All food has bacteria just not enough good ones to rebuild your gut and your health.
